Cá bò, black scrawled cowfish, is a popular street food in Nha Trang, Khánh Hòa. The fish gets its name from its skin, which is as black as coal. It’s an ugly fish to look at, but it turns into a very good meal once it’s cooked. How it’s grilled There are many ways to cook cá bò, but grilling is the best of them, in our view. It starts with a fish fresh from the sea. The cook takes the skin off with a sharp knife, scores a few shallow straight cuts across the flesh, adds some ingredients onto the fish and puts it over hot charcoal. A good cook grills it over a low fire and turns it often so it doesn’t burn. The skin is eaten too Don’t throw the skin away: it’s part of the dish. It’s sliced into small pieces and served with the fish. Two things make the meal. The first is the special sauce made from local chillies; without it, the fish is much less good. The second is the vegetables: papaya, carrot and herbs. How to eat it Take a bit of fish, some vegetables and a piece of skin together, and dip the lot in the sauce. Each mouthful mixes the soft, sweet fish, the crunchy skin and the heat of the chilli. Eating it outside Nha Trang If you can’t get to Nha Trang, the original article recommended Khoái restaurant on Lê Quý Đôn Street, District 3, Ho Chi Minh City, which served the dish and was open from 7am to 10pm when this was written. In Nha Trang itself, cá bò is one of the dishes worth trying alongside a day on the beach.
