Lẩu nấm is a mushroom hotpot. It is quite an expensive dish, and it is also served in luxury restaurants in Vietnam. The broth is stewed from chicken bones, and the mushrooms go into the pot and are eaten hot with noodles, chrysanthemum vegetables and the seafood or beef you prepare. Time: the broth stews for two to three hours. The mushrooms soak for 30 minutes, then about 15 minutes in ice water. Ingredients For the broth 1 kg chicken bones or ribs Alum A teaspoon of pepper A tablespoon of salt Seasoning, alum sugar, fish sauce For the hotpot 100 gram mushrooms: shiitake mushroom, Ganoderma mushroom, chicken leg mushrooms, enoki mushrooms, abalone mushrooms Flour Onion Noodles 200 gr shrimp, squid, salmon or beef (depending on the number of people eating) 300 gr chrysanthemum vegetables Spice, pepper, MSG For the dipping sauce A tablespoon of roasted white sesame A tablespoon of seasoning A tablespoon of broth How to make lẩu nấm 1. Prepare everything carefully Wash the chicken bones or ribs with salt, then rub them with alum and drain. This keeps the broth pure and hygienic. Soak all the mushrooms in a litre of cold water with two tablespoons of flour added for 30 minutes, then rinse. Next put them into ice water and soak for about 15 minutes, so the mushrooms are crispy and white. Take them out and rinse. Slice the onion thinly and fry it until gold and fragrant. Wash the shrimp, squid and salmon. Thread the shrimp and squid onto sticks. Lightly marinate the beef with pepper and MSG. 2. Stew the broth Put the chicken bones into boiling water, then move them to a saucepan containing three litres of water to stew. Add a teaspoon of pepper, a tablespoon of salt, seasoning, alum sugar and fish sauce. Stew over medium heat, uncovered, and skim off the foam often. Stew for two to three hours. 3. Make the dipping sauce Stir together a tablespoon of roasted white sesame, a tablespoon of seasoning and a tablespoon of the broth. 4. Serve Put all the mushrooms you have into the pot and eat it hot with the noodles and chrysanthemum vegetables, together with the seafood (or beef) you prepared. Share:
