Chè Đậu Xanh Lô Hội Recipe: Mung Bean Sweet Soup with Aloe Vera

Ingredients

  • 1 aloe vera leaf
  • 100 g mung beans (without the skin)
  • 150 g sugar
  • 1 vanilla tube
  • 1 teaspoon salt
  • 500 ml water

How to make chè đậu xanh lô hội

1. Prepare the aloe vera

Wash the aloe vera leaf and cut it into small sections. Remove the skin, then slice the small pieces of aloe into strips. Add 1 teaspoon salt to the aloe, mix it in, then wash the aloe again.

2. Cook the mung beans

Wash the mung beans and let them drain dry. Put them into a pan with 500 ml water and boil over medium heat. Skim off the foam while it boils; this is an important step.

When the mung beans are cooked, add the sugar and stir. Keep boiling for about 10 minutes.

3. Add the aloe vera and vanilla

Add the aloe vera to the saucepan and stir gently. Boil for about 5–7 minutes. Turn off the heat, add the vanilla and stir again.

The chè is ready to eat now. You can also keep it in the fridge, which the author says makes it more delicious.
