Kẹo Gừng Dẻo Recipe: Jelly Ginger Candy

Ingredients

  • 2 young ginger (medium size)
  • 1 pineapple
  • Sugar, to your taste – 100 gr sugar for 150 gr jelly
  • 50 gr roasted peanut, peeled and smashed

How to make kẹo gừng dẻo

1. Slice the ginger and pineapple

Peel the ginger and slice it thinly.

Peel the pineapple, cut out the eyes and slice it thinly.

2. Rinse and sugar the ginger

Rinse the sliced ginger in cold water 3–5 times to reduce its pungency. Then mix it with the sugar and leave it for about 15 minutes.

3. Cook the mixture

This is the important step. Mix the ginger with the sliced pineapple, pour it into a pan and fry, stirring regularly. Keep the heat low the whole time. Fry until the mixture becomes thick, then turn off the heat.

4. Add the peanut and store

Add the roasted peanut and mix well.

Store the candy in a big jar, or roll it into small candies in plastic bags.
