Đá Me Đậu Phộng Recipe: Iced Tamarind with Roasted Peanuts

Hanna Tran Hanna Tran | Updated October 16, 2026

Đá me đậu phộng is a cold tamarind drink for hot summer days. Ripe tamarind is cooked down with pineapple, ginger and sugar into a thick base, so you get the sour of the tamarind, the sweetness of the pineapple and the fragrance of ginger. The base keeps in a jar, and each glass is a spoonful of it over shaved ice with roasted peanuts sprinkled on top.

Time: about 10 minutes to soak the tamarind and about 20 minutes to cook the base, plus cooling.

    Ingredients

    For the tamarind base

    • 150 g ripe tamarind
    • Hot water (about half a bowl)
    • 40 g brown sugar or granulated sugar
    • 1 slice of pineapple
    • 1 small branch of ginger
    • Sesame seeds

    To serve

    • Ice
    • Peanuts

How to make đá me đậu phộng

    1. Soften the tamarind

Put the tamarind in a bowl, pour in about half a bowl of hot water and leave it to soak for about 10 minutes. Press and stir it with a teaspoon so the pulp breaks away into the water. Take out the seeds and keep the pulp and liquid.

    2. Prepare the ginger, pineapple, peanuts and sesame

Peel the ginger and grind it finely. Peel the pineapple, cut out the eyes and mince it.

Roast the peanuts and rub off their skins. Then roast the sesame until it’s fragrant.

    3. Cook the tamarind base

Pour the tamarind into a saucepan and add the pineapple, sugar and ginger. When it comes to the boil, turn the heat down and stir constantly as the tamarind cooks down smooth. Taste it and adjust so it’s lightly sour and sweet.

Keep cooking for about 20 minutes, or until the mixture is thick. Take it off the heat and let it cool, then stir in the roasted sesame.

Store it in a clean glass jar.

    4. Make a glass of đá me

Scoop a little of the tamarind base from the jar into a glass and add ice. Sprinkle a few roasted peanuts on top. Stir it well before you drink it, and drink it cold.
