Bánh Khoai Mỡ Chiên Giòn Recipe: Crispy Fried Purple Yam Sticks

Hanna Tran Hanna Tran | Updated October 16, 2026

Bánh khoai mỡ chiên giòn are crispy fried cakes made from purple yam (khoai mỡ), rolled into sticks. They’re a snack you can make at home instead of buying one, and the purple inside makes them stand out on a plate. In the original writer’s family they’re a weekend snack, eaten while chatting over iced tea or beer.

Plan ahead: the dough rests for 30 minutes before you shape it.

    Ingredients

    • 150 g purple yam (khoai mỡ)
    • 30 ml fresh milk
    • 40 g white sugar
    • 60 g tapioca flour
    • 50 g sticky (glutinous) rice flour
    • ½ teaspoon salt
    • Oil for deep-frying

How to make bánh khoai mỡ chiên giòn

    1. Cook and mash the yam

Peel the yam, wash it well and cut it into small pieces. Put them in a glass bowl and microwave for 4–5 minutes, until cooked. Add the salt and mash the yam with a spoon.

    2. Make the dough and let it rest

Add the sticky rice flour, tapioca flour, sugar and water to the mashed yam. Mix it with your hands until the dough is soft and smooth. Cover it carefully with cling film and leave it for 30 minutes. The original recipe singles this step out as the important one.

    3. Shape the sticks

Sprinkle tapioca flour over the dough. Divide it into small balls and roll each one into a long stick.

    4. Fry

Heat enough oil to cover the sticks completely. Use medium heat. Lower the sticks in one at a time and fry until the outside turns golden.

    5. Drain and serve

Lift them out onto a plate lined with paper towels to soak up the excess oil. Serve them hot, when they’re at their best.
