Mề gà sốt gừng is a hot dish for cold days: chicken gizzards cooked with ginger and star anise, sliced thin, then covered with a sauce of ginger, garlic, soy sauce and chilli. The ginger is split in two, with half going in with the gizzards and half into the sauce. Eat it with hot steamed rice.

Ingredients

  • 5–6 chicken gizzards
  • 1 large knob of ginger
  • 1–2 star anise
  • 1 tablespoon soy sauce
  • Spring onion and garlic

1. Prepare the ginger

2. Cook the gizzards

Wash the gizzards in water with a little salt. Put them in a pot with 1–2 tablespoons of water, half of the ginger, the star anise and ½ teaspoon salt. Cook until the gizzards are done.

Let them cool, then slice them thinly and arrange them on a plate.

3. Make the ginger sauce

This is the step that gives the dish its flavour.

Heat some oil in a pan and fry the minced garlic until fragrant. Add the rest of the ginger and fry for 2 more minutes. Then add 1 tablespoon soy sauce, ½ teaspoon sugar, ½ tablespoon water, the sliced spring onion and 2 teaspoons chilli powder (more if you like it spicy), and stir-fry quickly. Taste and adjust the seasoning. Let it come to the boil, then turn off the heat.

4. Serve

Pour the hot sauce over the sliced gizzards and serve straight away with steamed rice.
