This is a simple Vietnamese soup of artichoke flowers simmered with pork tail bones and pork loin, jujubes (red dates), almonds and carrot. There are only two steps: prepare everything, then let it simmer for an hour. Serve it hot, with steamed rice and other dishes. Time: about 1 hour of gentle simmering. Ingredients 2 artichoke flowers 300 g pork tail bones 200 g pork loin 6 jujubes (red dates) 10 g almonds 2 carrots Salt and seasoning Over 2 litres of water How to make artichoke soup with pork bones 1. Prepare the ingredients Cut each artichoke into 4 pieces and wash them. Chop the pork tail bones and cut the pork loin into pieces. Blanch the bones and the pork in boiling water, then rinse them clean. This gets rid of the scum so the soup comes out clearer. Cut the red dates. Peel the carrots and slice them. 2. Simmer the soup Bring over 2 litres of water to the boil in a pot. Add all the ingredients and simmer over low heat for 1 hour. Season to taste with salt and seasoning. Ladle it into bowls and eat it hot, with steamed rice. Share:
