Gà xào thập cẩm, chicken fried with vegetables, is the author’s family favourite at the weekend. Her mom usually makes it with bell pepper and mushrooms, and it works well as a lunch dish. It doesn’t take long to cook, and it’s best eaten with boiled rice and a hot soup. Plan ahead: the chicken marinates for 30 minutes. Ingredients 300 g chicken meat (use the breast) 50 g annatto seeds ¼ green bell pepper 50 g straw mushrooms 50 g baby tomatoes Spices: salt, pepper, sugar, pork/chicken broth mix, soya sauce, oyster sauce Spring onion, shallots, garlic 1 teaspoon black bean jam (tương đậu đen), optional; you can buy it at Asian markets How to make gà xào thập cẩm 1. Marinate the chicken Clean the chicken and cut it into small cubes. Add 1 teaspoon salt and 2 teaspoons oyster sauce, mix well and leave it for 30 minutes. 2. Prepare the vegetables Clean the green bell pepper, mushrooms and baby tomatoes. Cut the bell pepper into long pieces, and cut each tomato and mushroom in half. Peel the shallots and garlic and mince them well. 3. Cook the chicken Heat 3 teaspoons oil and fry the minced garlic until fragrant. Add the chicken and fry it quickly for 3–4 minutes. Cover the pan and cook for another 5–10 minutes, until the chicken is soft. 4. Add the vegetables Add all the vegetables and the annatto seeds to the pan and fry well. Add a little soya sauce, a little salt, ½ teaspoon pork/chicken broth mix and the black bean jam. Stir quickly over high heat. Season again to suit your taste, then turn off the heat. 5. Finish and serve Before serving, add a little more oyster sauce and the sliced spring onion. Serve it with boiled rice and hot soup. Share:
