Hanna Tran Hanna Tran | Updated October 16, 2026

Phở xào is fried pho with vegetables. Pho is the most popular dish in Vietnam, best known as beef pho and chicken pho, so stir-fried pho is quite unusual for Vietnamese people and foreigners alike. The author finds it as good as the original. It takes only 3 steps: cut the vegetables, prepare the shrimp, then stir-fry everything with the noodles.

Ingredients

  • 300 g fresh pho noodles
  • 150 g fresh shrimp (you can use dried shrimp, but the author suggests fresh)
  • 100 g purple cabbage
  • 100 g white cabbage
  • 50 g carrots
  • Some dill
  • Tapioca flour
  • Minced onion, oil, seasoning granules

You can buy the ingredients at Vietnamese markets.

Cut the purple and white cabbage into small strands and soak them in water. Peel the carrots and cut them into strips as you like.

2. Prepare the shrimp and vegetables

Peel the shrimp, remove the heads and season them to suit your taste. This step matters. Wash the vegetables and cut them into pieces.
