Cơm Chiên Thập Cẩm Recipe: Vietnamese Mixed Fried Rice

Hanna Tran Hanna Tran | Updated October 16, 2026

Cơm chiên thập cẩm is Vietnamese mixed fried rice, made with a bit of everything: shrimp, Chinese sausage, scrambled egg, jelly ear mushroom and diced vegetables. In Vietnam it turns up at family get-togethers and wedding parties alike, served alongside other main dishes. The ingredients are cheap, so it works just as well for an everyday family meal.

Ingredients

  • 300 g cooked rice
  • 3 large fresh shrimp
  • 50 g Chinese sausage
  • 2 eggs
  • 2–3 jelly ear mushrooms
  • 80 g mixed vegetables: corn kernels, green beans and carrot
  • Spring onion
  • Salt, sugar and pepper
  • 2–3 teaspoons soy sauce
  • Cooking oil
  • 1–2 teaspoons sesame oil (optional)

To serve: sliced coriander, and sliced chilli in soy sauce if you like it spicy.

How to make cơm chiên thập cẩm

    1. Prepare the add-ins

Soak the jelly ear mushrooms in water for 5–10 minutes, cut off the roots and slice them small. Peel the shrimp, clean them and cut them into small cubes.

Rinse the corn, green beans and carrot well. Peel the carrot and cut it into small cubes.

    2. Scramble the eggs

Beat the eggs with a little sliced spring onion. Heat some oil in the pan, pour in the egg and stir it with chopsticks as it sets.

    3. Fry the shrimp and vegetables

Add the shrimp, jelly ear mushroom and vegetables to the pan with the egg and fry them together. Season with salt and pepper and keep stirring quickly until the shrimp turn red and the vegetables are cooked through. This is the step to watch: the shrimp and vegetables need to be fully cooked before the rice goes in.

    4. Add the rice

Tip in the cooked rice and mix well. Turn the heat down low for this stage.

    5. Finish with soy sauce

Add 2–3 teaspoons of soy sauce and fry for 1 minute more, then turn off the heat. For more flavour, stir in 1–2 teaspoons of sesame oil once the heat is off.

Scatter sliced coriander over the top before serving. If you like it spicy, put some sliced chilli in a little soy sauce to eat alongside.
