Bò kho cà ri brings together two dishes that are hugely popular in Vietnam and Thailand: stewed beef and curry. It’s an unusual combination, and a tasty one. Cubes of beef are marinated in annatto oil, garlic and soy sauce, fried with lemongrass, then stewed with curry until almost all the liquid has cooked away. It’s an easy choice for a family meal, and the original author’s favourite way to eat it is with plain boiled rice. Plan ahead: the beef marinates for 1 hour before cooking. Ingredients 400 g beef 1 tablespoon curry powder Annatto seed oil: 1 tablespoon for the marinade, 1 tablespoon for frying 1 tablespoon minced lemongrass 2 teaspoons minced garlic 2 teaspoons soy sauce Sugar, salt and pepper Water How to make bò kho cà ri 1. Cut and marinate the beef Clean the beef carefully and cut it into 2.5 cm cubes. Mix the beef with 1 tablespoon annatto seed oil, 2 teaspoons minced garlic, 2 teaspoons soy sauce and a little sugar. Mix well and leave it for 1 hour to take in the seasoning. 2. Fry with lemongrass Heat a tablespoon of annatto seed oil over a medium heat, add 1 tablespoon minced lemongrass and fry until fragrant. Add all the marinated beef and stir-fry it quickly for 5 minutes. This first fry is where the flavour of the dish starts. 3. Stew with the curry Pour in enough water to cover the meat completely. Add 1 tablespoon of curry powder and bring it to the boil. Season to taste with sugar and salt. Lower the heat, cover the pot and cook until the beef is soft and has absorbed the seasoning. Keep stewing until the liquid has nearly all gone, then turn off the heat. Serve with boiled rice. Share:
